I wanted to share a breakfast recipe with you that we’ve been making a lot lately. It’s my easy French toast made with coconut oil instead of butter.

This recipe is:
• very easy to make
• made with simple, everyday ingredients
• a lighter twist on classic French toast
• great for busy mornings or slow weekends

You still get that warm, cozy French toast feeling, just made a little more nourishing. I love cooking it in coconut oil because it gives a subtle flavor and works beautifully if you’re avoiding butter.

You can keep it simple or top it with whatever you have on hand. Fresh fruit, a drizzle of maple syrup, yogurt, or nut butter all work really well.
